Richess of Ukrainian traditional cooking
It is hard to say how many hundreds or even thousands of receipts are used in traditional Ukrainian cooking. Every family has some family receipts. Ukrainian women like to cook and many of them are real masters in preparing food and drinks.
Many man cook at least some dishes, because the old tradition says that a real man, a Cossack, can do and should do every necessary thing cooking inclusive.
Girls and boys learn good cooking willingly because it is always pleasant to hear compliments and, besides, who of Ukrainians doesn’t like to eat well? There is a good Ukrainian tradition to share receipts even with unknown people if they are interested how to cook this or that.
Soup is a good essential dinner dish. The most popular traditional types of soups are borsch, Kapusniak, kulish or kuleshyk, yushka, scherba and milk soup. In Ukraine we say: “Each hostess has borsch, ” because there is a lot of variants to cook it.
Kapusniak is a kind of soup with cabbage. Kulish is a soup with mashed filling, for example, mashed peas, potatoes or other vegetables, corns and so on. Yushka is a soup with potatoes or other vegetables, corns, beans, macaroni or noodles. It is very popular in Polissia and Volyn. Scherba is a fish soup. Usually river fish is used for it.
Cooked meat is popular in hundreds of dishes. In traditional Cossack’s meat dishies many herbs are used. The plants make the dishes more tasty and very useful for health. The old tradition says that a man should have at least a piece of meat a day to be strong. So Ukrainian wives try to cook meat dishes for their husbands and sons at least once a day.
Many dishes are cooked of flour, for example, varenyks, halushkas, pancakes, so on. Baking is very popular all over the country. Milk and soft cheese are used very often in Ukrainian cooking. There are milk soups, cheese cakes, fried pies of cheese paste, pancakes with soft cheese filling.

Among traditional drinks you will find usvar, holodnyk, jelly, kvas, herb tea, milk, sour milk. Besides, now many people like tea, coffee and cocoa. Traditional Ukrainian alcoholic drinks are not strong. They are honey drinks, beer and good wines.
